MY FAVORITE PUMPKIN PIE

 

Ingredients:

  • 1 cup raw almonds, soaked in hot water for 15 minutes if you have a Vitamix (if you'll be using a different kind of blender, soak for 4 hours)

  • 2/3 cup pure maple syrup

  • 1 (16 oz.) can of pumpkin puree

  • 2 generous tsp. pumpkin pie spice

Directions:

  1. Preheat oven to 400.

  2. Drain the almonds and add to a blender along with all of the other ingredients.

  3. Blend until smooth.

  4. If you like pie crust, pour the batter into a prepared crust. (I don't like crust so I pour the batter directly into a pie plate.)

  5. Bake at 400 for 15 minutes, then drop the temperature to 350 and bake another 30 minutes.

  6. Let cool for 30 minutes.


It will be a little mousse-y if you eat it after the initial 30 minute cool.
If you want to make sure it's pie-y, cool for an additional 2 hours in the refrigerator before serving.
